  • 1/2 cup sugar
  • 1/2 cup white rum
  • 1/2 cup coconut rum
  • 1 cup canned coconut milk
  • Sparkling water (to taste)
  • Pomegranate arils (for garnish)

Instructions

  1. Muddle the Mint: In a large pitcher, muddle the mint leaves with sugar and lime juice until the flavors are well released and the sugar begins to dissolve.
  2. Strain the Mixture (Optional): If you prefer a smoother drink without mint leaf pieces, strain out the muddled mint leaves before proceeding.
  3. Prepare the Glasses: Fill four glasses halfway with ice to chill and help keep the drink cool.
  4. Mix and Pour: Pour the combined white rum, coconut rum, and coconut milk into the pitcher mixing with the muddled lime and mint mixture. Then pour this coconut rum mixture into each glass until they are about three-quarters full.
  5. Top with Sparkling Water: Fill the rest of each glass with sparkling water to add fizz and lighten the cocktail.
  6. Garnish and Serve: Garnish each drink with fresh mint leaves and pomegranate arils to add a festive look and a pop of color. Enjoy immediately!
