Instructions

  1. Cook the Bacon or Sausage: In a skillet over medium heat, cook the 4 pieces of bacon until crisp for the classic wrap. For the low carb version, cook the 8 chicken sausages thoroughly until browned and cooked through. Remove from skillet and set aside.
  2. Prepare the Eggs: For the classic wrap, crack the 4 eggs into a bowl, whisk, and season as desired. For the low carb version, whisk 6 eggs with 1/2 cup cottage cheese, salt, pepper, and garlic powder until fully combined for a creamy texture.
  3. Cook the Eggs: Melt 2 tablespoons of butter in the skillet over medium-low heat. Pour in the egg mixture and gently scramble (classic) or cook the cottage cheese egg mixture gently until firm but creamy (low carb). Remove from heat.
  4. Assemble the Wrap: Lay out the tortillas on a flat surface. For the classic version, layer each tortilla with cooked bacon, scrambled eggs, and a slice of American cheese. For the low carb version, distribute the chicken sausages evenly, top with the creamy eggs, and add a slice of white cheddar on each.
