This toasted bread sauce is a rich and creamy vegan alternative to a traditional British bread sauce, using toasted vegan bread crumbs, almond milk, and soya cream for a comforting and flavorful accompaniment perfect for festive meals or cozy dinners.

For the Sauce

  • 6 slices white bread (ensure it’s vegan)
  • 2 tbsp butter-flavoured rapeseed oil, plus extra to serve
  • 1 onion, finely chopped
  • 1 bay leaf
  • 1 thyme sprig
  • 600ml almond milk
  • Pinch of ground cloves
  • Pinch of ground nutmeg
  • Salt and freshly ground black pepper, to taste
  • 100ml soya cream

Instructions

  1. Toast the Bread: Toast the bread slices until they become dark brown and crisp. Once toasted, allow them to cool completely, then blitz the bread in a food processor until you have rough crumbs.
  2. Cook the Onion: Heat half of the butter-flavoured rapeseed oil in a saucepan over medium heat. Add the finely chopped onion and cook for about 10 minutes, stirring occasionally, until the onion is just brown and sticky.
  3. Add Aromatics and Milk: Add the bay leaf and thyme sprig to the pan, then pour in the almond milk. Season with ground cloves, ground nutmeg, salt, and freshly ground black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 5 minutes to allow the flavors to infuse.
  4. Combine Breadcrumbs and Simmer: Remove and discard the bay leaf and thyme sprig. Stir in all but a handful of the toasted breadcrumbs into the saucepan. Cook the mixture over low heat, stirring frequently, until it thickens to a sauce-like consistency. If preferred, use a blender to blitz the sauce until smooth for a creamier texture.
  5. Fry Remaining Breadcrumbs: While the sauce thickens, heat the remaining rapeseed oil in a frying pan and fry the reserved breadcrumbs until they turn golden and crisp.
  6. Add Cream and Serve: Stir the soya cream into the thickened sauce and heat through gently. Transfer the sauce to a serving dish, then spoon the golden fried breadcrumbs over the top. Drizzle with a little extra butter-flavoured rapeseed oil for added richness. The sauce can be kept chilled in the fridge for up to two days.
