Ingredients

Scale

Donut Batter

  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 1/3 cups milk
  • 1/3 cup sugar
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, melted and cooled to room temperature
  • 1 tsp baking powder
  • 1 pinch salt

Churro Topping

  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted and kept warm
  • 2 tbsp ground cinnamon

Chocolate Drizzle

  • 1/2 cup chopped dark chocolate
  • 2 tbsp heavy cream

Instructions

  1. Prepare the Dry and Wet Ingredients: In a large bowl, combine the flour, sugar, cinnamon, baking powder, and salt. In another bowl, whisk together the eggs, milk, vanilla extract, and melted cooled butter until well combined.
  2. Create the Batter: Gradually add the dry ingredients to the wet ingredients, stirring until the mixture is smooth and lump-free, forming a pourable batter.
  3. Bake the Donuts: Spoon or pipe the batter into a donut tin lined with foil or greased. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until the donuts turn light golden. Remove from oven and cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  4. Prepare the Topping: While the donuts cool, melt 1/4 cup of butter in a small bowl. In another bowl, mix together the granulated sugar and ground cinnamon for the coating.
  5. Make the Chocolate Ganache: Melt the chopped dark chocolate using a microwave or bain-marie. Stir in the heavy cream until the ganache is shiny and thick, ready for dipping.
  6. Assemble the Donuts: Brush each cooled donut with the melted butter, then roll thoroughly in the cinnamon sugar mixture to coat all sides. Dip the top half of each donut into the chocolate ganache, coating generously. Let set briefly before serving.

Notes

  • Ensure the melted butter for the batter is cooled to room temperature to avoid curdling the eggs.
  • If you don’t have a donut tin, use a mini muffin tin as a substitute with a slightly different shape.
  • For a dairy-free version, substitute milk and butter with plant-based alternatives and use dairy-free chocolate.
  • Store leftover donut bites in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4 days.
  • Reheat briefly in a microwave or oven before serving for best texture.
