Ingredients

Scale

For the Sugar Cookie Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Cheesecake Filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream (optional)
  • 1 tablespoon all-purpose flour

For the Topping (Optional):

  • Whipped cream
  • Sugar sprinkles
  • Fresh berries

Instructions

  1. Prepare the Sugar Cookie Crust: In a mixing bowl, combine the all-purpose flour, baking powder, and salt. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet and mix until a dough forms. Press the dough evenly onto the bottom of a greased 9-inch springform pan to form an even crust layer. Chill in the refrigerator while preparing the filling.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add granulated sugar and vanilla extract, mixing well. Add the eggs one at a time, blending each into the mixture. Mix in the sour cream if using, and then stir in the tablespoon of flour to help with texture.
  3. Assemble and Bake: Pour the cheesecake filling over the chilled sugar cookie crust, spreading evenly. Bake in a preheated oven at 325°F (163°C) for about 50 to 60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the oven door, and allow the cheesecake to cool inside for 1 hour to prevent cracking.
  4. Chill the Cheesecake: Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to fully set.
  5. Add Optional Toppings and Serve: Before serving, top the cheesecake with whipped cream, sprinkle with sugar sprinkles, and garnish with fresh berries if desired. Slice and enjoy!

Notes

  • Make sure the cream cheese is softened to avoid lumps in the filling.
  • The sour cream is optional but adds a creamy texture and slight tang to the filling.
  • Use a springform pan for easy removal of the cheesecake.
  • Allow the cheesecake to cool gradually in the oven to prevent cracks.
  • Chilling overnight yields the best texture and flavor.
