For the Crisp Topping and Crust
- 1/2 cup old fashioned oats
- 1/2 cup brown sugar
- 2/3 cup all-purpose flour
- 1/3 cup salted butter, melted
- 1/2 teaspoon cinnamon

For the Syrup
- 1/4 cup brown sugar
- 3 teaspoons cornstarch
- 1/3 cup water
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
- Prepare the topping mixture: In a bowl, mix the old fashioned oats, brown sugar, flour, cinnamon and melted butter just until the mixture becomes crumbly. Reserve half of this mixture to use later as the topping.
- Form the crust: Spread half of the crumbly topping mixture evenly into the bottom of a greased 9×9 inch baking pan to form the crust layer.
- Add the fruit layer: Arrange the peeled and sliced peaches along with the sliced strawberries evenly over the crust in the pan.
- Make the syrup: In a small saucepan over medium-high heat, combine the brown sugar, cornstarch, salt, and water. Cook, stirring constantly, until the mixture thickens, which should take just a couple of minutes. Be vigilant to avoid burning.
- Add vanilla and pour syrup: Remove the saucepan from heat, stir in the vanilla extract, and pour the syrup evenly over the fruit layer in the baking pan.
