  • 3 teaspoons cornstarch

  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the topping mixture: In a bowl, mix the old fashioned oats, brown sugar, flour, cinnamon and melted butter just until the mixture becomes crumbly. Reserve half of this mixture to use later as the topping.
  2. Form the crust: Spread half of the crumbly topping mixture evenly into the bottom of a greased 9×9 inch baking pan to form the crust layer.
  3. Add the fruit layer: Arrange the peeled and sliced peaches along with the sliced strawberries evenly over the crust in the pan.
  4. Make the syrup: In a small saucepan over medium-high heat, combine the brown sugar, cornstarch, salt, and water. Cook, stirring constantly, until the mixture thickens, which should take just a couple of minutes. Be vigilant to avoid burning.
  5. Add vanilla and pour syrup: Remove the saucepan from heat, stir in the vanilla extract, and pour the syrup evenly over the fruit layer in the baking pan.
  6. Add the topping: Sprinkle the remaining half of the crumbly topping mixture evenly on top of the syrup-covered fruit.
  7. Bake the crisp: Place the pan in a preheated oven at 350°F (175°C) and bake for 35 minutes, until the topping is golden and crisp.
