Puff Pastry
Filling
- 100g Fresh strawberries, sliced
- 100ml Whipping cream, sweetened with a few tablespoons of icing sugar
- 8 teaspoons Strawberry jam
- 1 tablespoon White cocoa syrup (@saveur_cestdelicieux)

- Prepare Pastry Shapes: Cut hearts out from the puff pastry or cut rectangles. If cutting rectangles, use only half the puff pastry; if cutting hearts, use the full 400g. Save any off cuts to use as pie bases later.
- Apply Egg Wash: Brush the top of the pastry shapes with egg wash to achieve a golden, glossy finish during baking.
- Bake Pastry: Bake the puff pastry in a preheated oven at 200°C (390°F) for approximately 15-20 minutes or until they are puffed, golden, and cooked through. Remove from oven and allow to cool.
- Slice and Fill: Carefully slice the baked pastry hearts or rectangles open. Spoon 1 teaspoon of strawberry jam inside the bottom half of each pastry shell.
- Prepare Whipped Cream: Whip the sweetened whipping cream together with the white cocoa syrup until soft peaks form.
- Pipe Cream and Add Strawberries: Pipe the sweetened whipped cream on top of the jam layer, then garnish with freshly sliced strawberries.
- Close and Decorate: Place the top pastry piece over the filling. Dust the cream puffs with icing sugar and drizzle melted chocolate over them for an elegant finish.
