Puff Pastry

  • 400g Puff pastry

Filling

  • 100g Fresh strawberries, sliced
  • 100ml Whipping cream, sweetened with a few tablespoons of icing sugar
  • 8 teaspoons Strawberry jam
  • 1 tablespoon White cocoa syrup (@saveur_cestdelicieux)

Toppings

  • About 2 tablespoons Icing sugar for sprinkling
  • Melted chocolate for drizzling
  • 1 egg (for egg wash, optional)

Instructions

  1. Prepare Pastry Shapes: Cut hearts out from the puff pastry or cut rectangles. If cutting rectangles, use only half the puff pastry; if cutting hearts, use the full 400g. Save any off cuts to use as pie bases later.
  2. Apply Egg Wash: Brush the top of the pastry shapes with egg wash to achieve a golden, glossy finish during baking.
  3. Bake Pastry: Bake the puff pastry in a preheated oven at 200°C (390°F) for approximately 15-20 minutes or until they are puffed, golden, and cooked through. Remove from oven and allow to cool.
  4. Slice and Fill: Carefully slice the baked pastry hearts or rectangles open. Spoon 1 teaspoon of strawberry jam inside the bottom half of each pastry shell.
  5. Prepare Whipped Cream: Whip the sweetened whipping cream together with the white cocoa syrup until soft peaks form.
  6. Pipe Cream and Add Strawberries: Pipe the sweetened whipped cream on top of the jam layer, then garnish with freshly sliced strawberries.
  7. Close and Decorate: Place the top pastry piece over the filling. Dust the cream puffs with icing sugar and drizzle melted chocolate over them for an elegant finish.
  8. Serve: Enjoy your strawberry cream puffs immediately or refrigerate briefly before serving for a chilled dessert experience.
