For the Dough:
- 2 cups (240g) all-purpose flour
- 1/2 cup (120ml) whole milk, lukewarm
- 2 1/4 teaspoons (7g) active dry yeast
- 1/4 cup (50g) granulated sugar
- 1/4 cup (60g) unsalted butter, softened
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
For the Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 1/2 cup (120ml) sour cream or Greek yogurt
For the Cinnamon Sugar Filling:
- 1/2 cup (100g) packed brown sugar
- 2 tablespoons ground cinnamon
- 1/4 cup (60g) unsalted butter, softened
For the Strawberry Filling:
- 1 cup fresh strawberries, chopped
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
For the Glaze (Optional):
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- 1/2 teaspoon vanilla extract
- Prepare the Dough: In a small bowl, dissolve the active dry yeast in lukewarm milk and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour, sugar, and salt. Add the softened butter, egg, vanilla extract, and the yeast mixture. Knead the dough for about 8-10 minutes until it becomes soft, smooth, and slightly sticky. Cover the bowl with a clean cloth and let the dough rise in a warm place for 1 to 1.5 hours, or until it doubles in size.
- Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with granulated sugar, flour, vanilla extract, and sour cream (or Greek yogurt) until smooth and creamy. Set aside.
- Prepare the Cinnamon Sugar Filling: In a small bowl, mix together the brown sugar and ground cinnamon. Set apart.
- Prepare the Strawberry Filling: Combine chopped strawberries, granulated sugar, and lemon juice in a small bowl. Let the mixture macerate for 10-15 minutes to release juices and soften slightly.
- Roll Out the Dough: On a lightly floured surface, roll the dough into a large rectangle approximately 12×16 inches. Spread the softened butter evenly over the dough surface. Sprinkle the cinnamon sugar mixture over the butter layer.
- Add Cheesecake and Strawberries: Gently dollop and spread the cheesecake filling over the cinnamon sugar layer, leaving a small border around the edges. Scatter the macerated strawberries evenly on top of the cheesecake layer.
- Roll and Cut the Rolls: Carefully roll the dough tightly from the longest side into a log. Using a sharp knife, slice the log into 10-12 equal rolls. Place the rolls cut side up into a greased 9×13 inch baking dish or on a parchment-lined baking sheet.
- Second Rise: Cover the rolls loosely with plastic wrap or a clean towel and allow them to rise for another 30-45 minutes until puffy.
- Bake: Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until they are golden brown and cooked through. Remove from oven and allow to cool slightly.
- Prepare the Glaze (Optional): While the rolls are baking, whisk together powdered sugar, milk or cream, and vanilla extract until smooth. Drizzle the glaze over the warm rolls before serving.
Notes
- Use room temperature ingredients for best dough texture and yeast activation.
- The strawberry filling adds moisture; avoid adding excess liquid to prevent soggy rolls.
- If fresh strawberries are unavailable, frozen (thawed and drained) can be used.
- These rolls are best enjoyed fresh but can be stored in the refrigerator for up to 3 days. Reheat gently before serving.
- To make the rolls dairy-free, substitute cream cheese and butter with plant-based alternatives.
