  • 2 tablespoons ground cinnamon
  • 1/4 cup (60g) unsalted butter, softened

For the Strawberry Filling:

  • 1 cup fresh strawberries, chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a small bowl, dissolve the active dry yeast in lukewarm milk and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour, sugar, and salt. Add the softened butter, egg, vanilla extract, and the yeast mixture. Knead the dough for about 8-10 minutes until it becomes soft, smooth, and slightly sticky. Cover the bowl with a clean cloth and let the dough rise in a warm place for 1 to 1.5 hours, or until it doubles in size.
  2. Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with granulated sugar, flour, vanilla extract, and sour cream (or Greek yogurt) until smooth and creamy. Set aside.
  3. Prepare the Cinnamon Sugar Filling: In a small bowl, mix together the brown sugar and ground cinnamon. Set apart.
  4. Prepare the Strawberry Filling: Combine chopped strawberries, granulated sugar, and lemon juice in a small bowl. Let the mixture macerate for 10-15 minutes to release juices and soften slightly.

  7. Roll and Cut the Rolls: Carefully roll the dough tightly from the longest side into a log. Using a sharp knife, slice the log into 10-12 equal rolls. Place the rolls cut side up into a greased 9×13 inch baking dish or on a parchment-lined baking sheet.
  8. Second Rise: Cover the rolls loosely with plastic wrap or a clean towel and allow them to rise for another 30-45 minutes until puffy.
