Instructions

  1. Prepare the salt and pepper seasoning: In a small bowl, combine the salt, sugar, ground white pepper, five-spice powder, and ground ginger. Stir well to mix all the spices uniformly. Set this seasoning blend aside for later use.
  2. Prepare the dumplings and scallions: Separate the white and green parts of the scallions. Cut the white parts into 1-inch pieces for cooking, and thinly slice the green parts for garnish at the end.
  3. Heat the oil and soften dumplings: Heat a wok or large 12-inch nonstick skillet over medium-high heat. Once hot, add the canola or grapeseed oil, then add the frozen potstickers. Stir-fry gently for about 1 minute, shaking the pan and tossing the dumplings lightly to soften them slightly without browning.
  4. Add green beans, scallions, and ginger: Add the trimmed green beans, the white scallion pieces, and the finely chopped fresh ginger to the pan.
