  • 1 ripe avocado, cubed

Yogurt and Feta Base

  • 1/2 cup thick, full-fat yogurt (preferably Greek or Icelandic)
  • 1 teaspoon honey
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped parsley leaves and tender stems

Instructions

  1. Prepare the Dressing and Salad: In a large bowl, whisk together the lemon juice, Dijon mustard, and olive oil until smooth.
