Instructions

  1. Cook berries: In a small saucepan, combine the raspberries, sugar or honey, and water. Cook over medium heat for about 10 minutes, stirring frequently, until the berries start breaking down into a thick mixture.
  2. Blend berries: Remove the pan from heat and transfer the cooked berries to a blender. Blend until smooth and even in texture.
  3. Strain puree: Pour the raspberry puree through a fine sieve to remove seeds, pressing with the back of a spoon to extract as much liquid as possible.
  4. Heat milk: In a medium saucepan, warm the milk over low heat. Whisk constantly and bring to a simmer, but do not let it boil; remove from heat as soon as it reaches a simmer.
  5. Melt white chocolate: Add the white chocolate chips to the warm milk and stir until fully melted and the mixture is smooth. If needed, return the pan to low heat briefly to help melt the chocolate completely.
  6. Combine flavors: Stir the raspberry puree and vanilla extract into the white chocolate milk until smoothly incorporated. Add 1 or 2 drops of natural red food coloring if desired for a richer color, mixing well.
  7. Serve: Pour the raspberry hot chocolate into mugs and top with whipped cream if preferred. Serve immediately while warm.
