Ingredients

Scale

Cookie Crumble

  • 30 Golden Oreos, crumbled
  • 2 teaspoons cinnamon
  • 2 teaspoons ground ginger
  • ½ teaspoon ground nutmeg

Pumpkin Filling

  • 15 ounces pumpkin puree (1 can)
  • ¾ cup cold milk
  • 1 cup cold heavy whipping cream
  • 2 boxes Jell-O vanilla instant pudding (3.4 ounces each)
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg

Garnish

  • 1 cup whipped cream

Instructions

  1. Prepare Cookie Crumble: In a small bowl, combine the crumbled Golden Oreos with 2 teaspoons cinnamon, 2 teaspoons ground ginger, and ½ teaspoon ground nutmeg. Mix well and set aside.
  2. Make Pumpkin Filling: In a medium mixing bowl, use a handheld electric mixer to blend pumpkin puree, cold milk, cold heavy whipping cream, vanilla instant pudding mix, 1 teaspoon cinnamon, ½ teaspoon ground ginger, and ¼ teaspoon ground nutmeg until the mixture is smooth and well combined.
  3. Fill Piping Bag: Spoon the pumpkin filling into a 1-gallon ziplock bag and cut off a small corner to create a piping bag for easy layering.
  4. Assemble Parfaits: In individual parfait glasses, sprinkle 2-3 tablespoons of the cookie crumble mixture at the bottom. Pipe about ¼ cup of pumpkin filling over the cookie crumbs. Repeat layering one more time or until the glasses are filled.
  5. Chill: Place the assembled parfaits in the refrigerator and chill for 1-2 hours to allow the filling to set and flavors to meld.
  6. Garnish and Serve: Top each parfait with a dollop of whipped cream just before serving. Enjoy your seasonal dessert!

Notes

  • Use cold ingredients for the pumpkin filling to ensure the pudding sets properly.
  • Golden Oreos provide a lovely color contrast and a unique twist compared to traditional chocolate Oreos.
  • These parfaits can be made a day ahead to deepen the flavors; just add whipped cream right before serving.
  • For a lighter version, substitute heavy whipping cream with whipped topping or reduce the amount.
  • If you prefer less spice, reduce the cinnamon, ginger, and nutmeg to taste.
