Ingredients

Scale

Dry Ingredients

  • 3 ⅓ cups all-purpose flour
  • 3 cups sugar
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg

Wet Ingredients

  • 15 ounces pumpkin puree (1 can)
  • 1 cup vegetable oil
  • 4 large eggs (room temperature)
  • ⅔ cup water

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans or line them with parchment paper to ensure the bread doesn’t stick.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking soda, salt, ground cinnamon, and ground nutmeg until well combined to evenly distribute the spices and leavening agents.
  3. Combine Wet Ingredients: In a separate bowl, mix the pumpkin puree, vegetable oil, eggs, and water until the mixture is smooth and homogeneous.
  4. Incorporate Wet and Dry Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Avoid overmixing to ensure the bread remains tender.
  5. Pour and Bake: Divide the batter evenly between the prepared loaf pans. Place them in the preheated oven and bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Remove: Allow the pumpkin bread loaves to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely. This helps the bread set and prevents it from breaking apart.
  7. Slice and Serve: Once cooled, slice the pumpkin bread and enjoy it plain, with butter, or your favorite spread. Store leftovers in an airtight container for up to 4 days.

Notes

  • For best results, use room temperature eggs to help the batter mix evenly.
  • You can add ½ cup of chopped nuts or chocolate chips to the batter for extra texture and flavor.
  • Store baked pumpkin bread in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
  • To reduce sugar, you can adjust to 2 cups but the bread will be less sweet and moist.
  • Make sure not to overmix the batter to keep the bread tender.
