Ingredients

Scale

Dry Ingredients

  • 3 ⅓ cups all-purpose flour
  • 3 cups sugar
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg

Wet Ingredients

  • 15 ounces pumpkin puree (1 can)
  • 1 cup vegetable oil
  • 4 large eggs (room temperature)
  • ⅔ cup water

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans or line them with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, sugar, baking soda, salt, ground cinnamon, and ground nutmeg. Whisk these together until evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, vegetable oil, eggs, and water until the mixture is smooth and well combined.
  4. Combine Wet and Dry Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or wooden spoon just until all ingredients are incorporated. Avoid overmixing to keep the bread tender.
  5. Pour Batter into Pans: Divide the batter evenly between the prepared loaf pans, smoothing the tops with a spatula.
  6. Bake: Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. If the tops brown too quickly, tent with foil during the last 15 minutes of baking.
  7. Cool and Serve: Allow the loaves to cool in the pans for about 10 minutes, then remove them and transfer to a wire rack to cool completely before slicing.

Notes

  • For a nutty variation, consider adding 1 cup of chopped walnuts or pecans to the batter.
  • You can substitute water with freshly brewed coffee for a richer flavor.
  • Ensure eggs are at room temperature for better mixing and texture.
  • Store the pumpkin bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Freeze the pumpkin bread tightly wrapped for up to 3 months.
