Dough
- 1 1/2 cups whole wheat flour
- 1/2 cup vanilla protein powder
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/4 cup applesauce
- 1/4 cup neutral-flavored oil
- 1 teaspoon vanilla extract
Filling
Glaze
- 1 cup confectioners sugar (sugar-free or regular)
- 1 cup vanilla protein powder (optional)
- 2 tablespoons milk or water (as needed)
- 1/2 teaspoon vanilla extract
- Prepare the Dough: In a large mixing bowl, whisk together whole wheat flour, 1/2 cup vanilla protein powder, sugar, and baking powder until well combined.
- Add Wet Ingredients: Stir in applesauce, neutral-flavored oil, and 1 teaspoon vanilla extract to the dry ingredients. Mix until a dough forms, adding a little water if dough is too dry. Knead gently on a floured surface until smooth.
- Roll out the Dough: Roll the dough into a rectangle about 1/8 inch thick. Cut into equal-sized rectangles, approximately 3×4 inches each, to form the base of your pop tarts.
- Fill and Seal: Place a spoonful of strawberry jam in the center of half the rectangles. Moisten edges with water, then place the remaining rectangles on top. Press edges with a fork to seal thoroughly.
- Bake the Pop Tarts: Preheat oven to 350°F (175°C). Place the prepared pop tarts on a parchment-lined baking sheet and bake for 18-20 minutes or until golden brown.
- Prepare the Glaze: In a small bowl, combine confectioners sugar, 1 cup vanilla protein powder (optional), vanilla extract, and milk or water as needed to create a smooth, thick glaze.
- Glaze and Serve: Once cooled, drizzle or spread the glaze over the pop tarts. Allow the glaze to set before serving.
Notes
- For a sweeter dough, increase sugar to 2 tablespoons.
- Use sugar-free jam for lower sugar content.
- Ensure pop tarts are sealed tightly to prevent filling leakage during baking.
- Glaze with added protein powder increases protein content but can alter sweetness and texture.
- Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
