Beef Tenderloin

Vegetables

  • 1 1/2 lbs potatoes, sliced into wedges
  • 2 large carrots, chopped into bite-sized pieces
  • 1 onion, sliced

Glaze for Onions

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey

Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. This prevents sticking and makes cleanup easier.
  2. Roast Hearty Vegetables: In a bowl, toss the potato wedges and chopped carrots with 1 tablespoon of olive oil, salt, and pepper to coat evenly. Spread the vegetables on one half of the baking sheet. Place them in the oven and roast for 15 to 20 minutes until they begin to soften.
  3. Prepare Beef & Onions: While the vegetables roast, pat the beef tenderloin dry with paper towels. In a small bowl, combine the remaining 1 tablespoon of olive oil with finely chopped rosemary, salt, and pepper. Rub this mixture all over the beef. In another bowl, whisk together the balsamic vinegar and honey, then toss the sliced onions in this glaze to coat well.
  4. Add Beef & Finish Roasting: Remove the sheet pan from the oven and push the roasted vegetables to one side. Place the seasoned beef tenderloin in the center of the pan and add the glazed onions to the remaining space. Return the pan to the oven and continue roasting for an additional 15 to 25 minutes, or until the beef reaches your preferred doneness (130-135°F for medium-rare) and the vegetables are tender.
  5. Rest & Serve: Transfer the beef to a cutting board and tent loosely with foil. Allow it to rest for 10 minutes to retain juices. Slice the beef against the grain and serve alongside the roasted vegetables and balsamic-honey onions for a complete, delicious meal.
