Ingredients

Scale

Crust

  • 24 Oreo cookies (crushed)
  • ½ cup salted butter (melted)

Cheesecake Filling

  • 32 ounces cream cheese (softened to room temperature, about 4 blocks)
  • ¾ cup white sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • ¾ cup sour cream
  • 20 Oreo cookies (coarsely chopped)

Instructions

  1. Prepare the crust: Preheat your oven to 325°F (163°C). Crush 24 Oreo cookies finely using a food processor or placing them in a sealed bag and crushing them with a rolling pin. Combine the crushed Oreos with the melted butter and mix until evenly combined. Press the mixture firmly into the bottom of a greased 9×13-inch baking pan to form an even crust layer.
  2. Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy using a handheld mixer or stand mixer. Gradually add the sugar and beat until well combined. Mix in the vanilla extract. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until the mixture is smooth.
  3. Add Oreo chunks: Gently fold the coarsely chopped 20 Oreo cookies into the cheesecake batter, dispersing them evenly but not smashing them too much.
  4. Assemble and bake: Pour the cheesecake batter over the prepared Oreo crust in the baking pan, spreading it out evenly. Bake in the preheated oven for 50-60 minutes, or until the center is almost set but still slightly jiggly.
  5. Cool and chill: Remove the cheesecake bars from the oven and let them cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, to allow the bars to fully set.
  6. Serve: Cut into bars and serve chilled. Enjoy your creamy and chocolatey Oreo cheesecake bars!

Notes

  • Make sure the cream cheese is softened to room temperature to avoid lumps in the batter.
  • If you want firmer bars, chill the cheesecake bars overnight.
  • Use salted butter for the crust to balance the sweetness.
  • Store leftover bars refrigerated tightly covered for up to 5 days.
  • For easier slicing, dip a knife in hot water and wipe dry before cutting.
