Blend until a sticky dough forms, scraping down the sides of the processor bowl occasionally to ensure even mixing. This may take several minutes to achieve a uniform, sticky consistency.
  2. Shape the bites: Roll the sticky mixture into small balls, about bite-sized, and place them on a lined cookie sheet. Flatten each ball slightly using your palm to create a disc shape. Place the cookie sheet in the freezer for approximately 15 minutes to firm the bites up.
  3. Melt the chocolate: While the bites chill, melt the chocolate chips until smooth. This can be done using a microwave in short bursts or a double boiler on stovetop, stirring frequently to prevent burning.
  4. Coat the bites: Dip each chilled pecan pie bite into the melted chocolate, ensuring full coverage, then return to the lined cookie sheet. Press a whole pecan on top of each coated bite for garnish and extra crunch.
