Instructions

  1. Prepare the tortillas: Preheat your oven to 400°F (200°C). Brush both sides of the corn tortillas lightly with cooking oil. Place them on a baking sheet and bake for about 5-7 minutes on each side or until crispy and golden. Remove from the oven and set aside.
  2. Season the chicken: In a medium bowl, combine the shredded rotisserie chicken with the taco seasoning mix and about 2 tablespoons of salsa. Mix well to coat evenly.
  3. Heat the beans and corn: In a small saucepan over medium heat, warm the black beans and canned corn until heated through, about 5 minutes. Stir occasionally to prevent sticking.
  4. Assemble the tostadas: On each crispy tortilla, spread a layer of the warmed black beans and corn mixture. Top with a generous amount of the seasoned shredded chicken.
  5. Add salsa and cheese: Spoon about a tablespoon of salsa over the chicken on each tostada, then sprinkle evenly with shredded Colby Jack cheese.
  6. Melt the cheese: Return the assembled tostadas to the oven for 3-5 minutes or until the cheese melts and starts to bubble.
  7. Garnish and serve: Remove from heat, garnish with fresh cilantro leaves and diced tomatoes. Serve immediately while warm and crispy.
