Ingredients

Scale

Meatloaf Mixture

  • 2 lbs Ground Chicken
  • 1 cup Grated Parmesan Cheese
  • 1/2 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Garlic, minced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Dried Basil
  • 1/2 teaspoon Dried Parsley
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Whole Milk

Garlic Parmesan Topping

  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced
  • 1/4 cup Grated Parmesan Cheese
  • 1 tablespoon Chopped Parsley

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when you finish preparing the meatloaf mixture.
  2. Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground chicken, grated parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix until just combined, being careful not to overmix to keep the meatloaf tender.
  3. Shape the Meatloaf: Transfer the mixture onto a lined baking sheet or an oven-safe loaf pan and form it into a loaf shape approximately 9×5 inches in size for even cooking.
  4. Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the loaf is cooked through.
  5. Prepare the Garlic Parmesan Topping: While the meatloaf is baking, melt the unsalted butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and stir in the grated parmesan cheese and chopped parsley.
  6. Apply the Topping and Broil: Once the meatloaf is cooked, remove it from the oven and brush the garlic parmesan topping generously over the top. Return the meatloaf to the oven under the broiler for 2-3 minutes, or until the topping is bubbly and golden brown. Watch carefully to prevent burning.
  7. Rest and Serve: Allow the meatloaf to rest for 5-10 minutes before slicing. This helps to keep it moist and makes slicing easier. Serve warm garnished with extra parsley if desired.

Notes

  • Ground chicken can be substituted with ground turkey if preferred.
  • Make sure not to overmix the meatloaf mixture to keep the meatloaf tender and juicy.
  • Use fresh garlic for the topping to enhance the flavor.
  • Let the meatloaf rest after baking before slicing to prevent it from falling apart.
  • To make it gluten-free, substitute panko breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
