Ingredients

Scale

Meatloaf

  • 2 lbs Ground Chicken
  • 1 cup Grated Parmesan Cheese
  • 1/2 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Garlic, minced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Dried Basil
  • 1/2 teaspoon Dried Parsley
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Whole Milk

Garlic Parmesan Sauce

  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced
  • 1/4 cup Grated Parmesan Cheese
  • 1 tablespoon Chopped Parsley

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your meatloaf mixture is prepared.
  2. Prepare the meatloaf mixture: In a large bowl, combine ground chicken, grated Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix gently until all ingredients are evenly incorporated, being careful not to overwork the meat.
  3. Shape and bake: Transfer the mixture into a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper. Bake in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Make garlic Parmesan sauce: While the meatloaf is baking, melt the unsalted butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and stir in grated Parmesan cheese and chopped parsley.
  5. Top and rest: When the meatloaf is done, remove it from the oven and spoon the garlic Parmesan sauce evenly over the top. Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute and keep it moist.
  6. Serve: Slice the meatloaf and serve warm. Garnish with additional parsley if desired and enjoy this tender, flavorful dish!

Notes

  • Use whole milk or a milk alternative to keep the meatloaf moist and tender.
  • Ground chicken is leaner than beef or pork, so be careful not to overmix to avoid a dense texture.
  • You can substitute panko breadcrumbs with gluten-free breadcrumbs if needed.
  • For a spicier variation, add a pinch of red pepper flakes or cayenne pepper to the meat mixture.
  • Leftover meatloaf is great for sandwiches or wraps the next day.
