Meatloaf Layer
- 1 lb ground beef (85/15 preferred)
- 1/2 cup plain breadcrumbs
- 1/3 cup milk
- 1 egg
- 1/4 cup ketchup
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Mashed Potato Layer
- 3 cups mashed potatoes (prepared or leftover)
- 1/4 cup sour cream
- 2 tbsp butter
- Salt & pepper, to taste
- Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated, ensuring the meat mixture holds together well.
- Shape and Bake the Meatloaf: Transfer the meat mixture into a greased loaf pan or shape into a loaf on a baking sheet. Bake in a preheated oven at 350°F (175°C) for about 45 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
- Prepare the Mashed Potato Layer: While the meatloaf is baking, prepare the mashed potatoes by combining them with sour cream, butter, and salt and pepper to taste. Stir until smooth and creamy. You can use leftover mashed potatoes or prepare fresh ones in advance.
- Top and Bake Again: Once the meatloaf is done baking, carefully spread the mashed potato mixture over the top of the meatloaf evenly. Return to the oven and bake for an additional 15-20 minutes, or until the mashed potatoes are heated through and slightly golden on top.
- Serve: Remove from the oven and let the meatloaf rest for 5 minutes before slicing. Serve warm as a hearty and comforting main dish.
Notes
- Use 85/15 ground beef to ensure the meatloaf stays juicy yet firm.
- Leftover mashed potatoes work great for the topping, making this a perfect recipe for using leftovers.
- Adjust salt and pepper according to your taste preferences.
- For extra flavor, add fresh chopped herbs such as parsley or thyme into the meatloaf mixture.
- Ensure the internal temperature of the meatloaf reaches at least 160°F for safe consumption.
