  • 1 cup half & half

Instructions

  1. Boil Pasta: Cook the pasta according to package directions. Reserve some pasta water before draining, then set the pasta aside.
  2. Mix Seasonings: Combine dried basil, oregano, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper in a small bowl.
  3. Season Chicken: Rub half of the seasoning mix thoroughly onto both sides of the chicken breasts.
  4. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the seasoned chicken breasts for 5-7 minutes per side until golden brown. Remove chicken from skillet and set aside.
  5. Sauté Garlic and Tomatoes: Reduce heat to low and add minced garlic and chopped sun dried tomatoes (plus optional sun dried tomato oil) to the skillet. Sauté gently for 1-2 minutes to release flavors.
  6. Deglaze Pan: Pour in the chicken stock, scraping up any browned bits from the bottom of the pan to incorporate into the sauce.
  7. Add Cream and Cheese: Slowly stir in half & half and gradually add the parmesan cheese at low heat, stirring frequently to melt it smoothly into the sauce.
  8. Simmer with Chicken: Increase heat to medium and bring sauce to a gentle simmer. Stir in the remaining seasoning mix. Return the chicken breasts to the pan and simmer for 5-10 minutes until cooked through and sauce slightly thickened, adjusting timing based on chicken thickness. Remove chicken once done.
  9. Combine Pasta and Sauce: Add the cooked pasta to the sauce, stirring to combine thoroughly. Adjust sauce consistency by adding reserved pasta water as needed. Slice chicken breasts and place on top of the pasta.
