Instructions

  1. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy.
  2. Cook the Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, and sauté until they are soft and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.
  3. Cook the Sausage: In the same skillet, add the breakfast sausage, breaking it apart with a spoon. Cook over medium heat until browned and cooked through, about 8-10 minutes. Drain excess fat if necessary.
