Ingredients

Scale

Guacamole Base

  • 4 avocados, pitted
  • Juice of ½ a lemon
  • Juice of ½ a lime
  • ¼ cup diced red onion
  • ¼ teaspoon salt
  • ¼ cup chopped cilantro, plus extra for topping

Mix-Ins

  • 1 ear grilled corn, cut off the cob
  • ⅓ cup cherries, pitted and chopped
  • ⅓ cup blueberries
  • ½ cup chopped strawberries
  • ¼ cup crumbled feta, plus extra for topping

To Serve

  • Lime wedges
  • Your favorite tortilla chips

Instructions

  1. Prepare the guacamole base: In a medium mixing bowl, combine the pitted avocados, lemon juice, lime juice, diced red onion, and salt. Use a fork or potato masher to mash the mixture to your desired consistency – whether chunky or smooth.
  2. Add fresh mix-ins: Gently fold in the chopped cilantro, grilled corn kernels, cherries, blueberries, strawberries, and crumbled feta cheese. Be careful to fold delicately to avoid breaking up the berries too much, preserving their texture and appearance.
  3. Season and serve: Taste the guacamole and adjust the salt if needed. Scoop the mixture into a serving bowl and garnish with extra chopped cilantro and a tablespoon or two of crumbled feta. Serve with lime wedges and your favorite tortilla chips for dipping.

Notes

  • Grill the corn ahead of time by brushing with a little oil and cooking on a grill or grill pan until lightly charred.
  • For a zestier flavor, add a pinch of chili flakes or finely diced jalapeño.
  • This guacamole is best served fresh but can be stored in an airtight container in the refrigerator for up to 1 day; cover the surface with plastic wrap to prevent browning.
  • Ensure berries are dry before folding in to maintain texture and prevent guacamole from becoming watery.
  • To make it vegan, omit the feta cheese or substitute with a vegan cheese alternative.
