Ingredients

Scale

Salmon

  • 4 fillets salmon (6 oz each)
  • 1/2 cup unsalted butter (1 stick)
  • 2 lemons (1 for juice, 1 for slices)
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Vegetables

  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough for roasting the potatoes and broccoli to crispy perfection.
  2. Prepare the potatoes: Wash and dice the potatoes into bite-sized pieces. Toss them with 1 tablespoon of olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon paprika until well coated. Spread them evenly on a large baking sheet.
  3. Start roasting potatoes: Place the baking sheet with the potatoes in the oven and roast for about 20 minutes, until they start to become crispy and golden.
  4. Prepare the broccoli: Meanwhile, toss the broccoli florets with the remaining 1 tablespoon olive oil and a pinch of salt and pepper. Set aside.
  5. Make lemon butter sauce: In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the juice of 1 lemon.
  6. Prepare the salmon: Pat the salmon fillets dry and season both sides with salt and pepper.
  7. Add broccoli and salmon to the oven: After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Push the potatoes to one side and add the broccoli florets on the other side. Place the salmon fillets skin-side down on the baking sheet, making space between each fillet.
  8. Bake everything together: Brush the salmon fillets generously with the lemon butter sauce. Place thin slices of lemon on top of each fillet. Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender and slightly crisp.
  9. Serve and garnish: Remove from the oven and sprinkle fresh parsley over the salmon and vegetables if desired. Serve immediately to enjoy the warm, flavorful meal.

Notes

  • Use a meat thermometer to ensure salmon reaches an internal temperature of 145°F for safe consumption.
  • For extra crispiness on potatoes, soak diced potatoes in cold water for 30 minutes before roasting and dry thoroughly.
  • Adjust seasoning according to taste; adding a pinch of chili flakes can add a nice kick.
  • Leftovers can be stored in the refrigerator for up to 2 days and reheated gently to avoid drying out the salmon.
