Main Ingredients
- 2 x 400g cans chickpeas in water, drained
- 2 fat garlic cloves, roughly chopped
- 3 tbsp Greek yogurt
- 3 tbsp tahini paste
- 3 tbsp extra-virgin olive oil, plus extra for drizzling
- Zest and juice of 2 lemons
- 20g pack coriander
- Prepare the ingredients: Drain the chickpeas thoroughly to remove excess water. Roughly chop the garlic cloves and zest and juice the lemons so they are ready to be added to the food processor.
- Blend base mixture: Place the chickpeas, chopped garlic, Greek yogurt, tahini paste, olive oil, lemon zest, and lemon juice into a food processor. Whizz the mixture until it becomes fairly smooth, scraping down the sides of the processor if needed to ensure even blending.
- Season and add coriander: Generously season the hummus with salt and pepper to taste. Add the fresh coriander to the processor and pulse just until the coriander is roughly chopped and incorporated into the hummus, preserving some texture and vibrant green flecks.
- Serve: Spoon the hummus into a serving bowl, drizzle with a little extra-virgin olive oil over the top to enhance flavor and appearance, and serve immediately with your choice of dippers like pita bread, vegetable sticks, or crackers.
