Chicken Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
Jalapeno Peach Sauce Ingredients
- 2 cups fresh peaches, peeled and diced
- 2 fresh jalapenos, seeded and finely chopped
- 1/2 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Marinate the Chicken: In a large bowl, combine olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika. Add chicken breasts and toss to coat evenly. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours for enhanced flavor.
- Cook the Chicken: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. When the oil is hot, place the marinated chicken breasts in the skillet. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
- Prepare the Jalapeno Peach Sauce: In a blender or food processor, combine peeled and diced peaches, seeded jalapenos, finely chopped red onion, minced garlic, honey, apple cider vinegar, soy sauce, lime juice, and olive oil. Blend until smooth or slightly chunky based on preference. Season with salt and pepper to taste.
- Heat the Sauce: Pour the blended sauce into the skillet used to cook the chicken and heat over medium heat for 3-5 minutes, stirring occasionally until warmed through and slightly thickened.
- Serve: Spoon the warm jalapeno peach sauce over the cooked chicken breasts and serve immediately with your choice of side dishes such as rice, salad, or steamed vegetables.
Notes
- Marinating the chicken for longer will result in more flavorful and tender meat.
- Adjust the number of jalapenos according to your desired spice level.
- If fresh peaches are unavailable, canned peaches packed in juice can be used as a substitute.
- The sauce can be made ahead of time and refrigerated for up to 2 days.
- For a gluten-free version, use gluten-free soy sauce or tamari.
