Ingredients

Scale

Filling

  • 8 oz Feta Cheese (Can substitute with goat cheese or ricotta.)
  • 2 tbsp Fresh Dill (Use fresh for best flavor.)
  • 2 tbsp Fresh Mint (Basil can be a substitute.)
  • 1 tbsp Lemon Zest (Use zest from unwaxed lemons.)
  • Black Pepper to taste

Phyllo Rolls

  • 8 sheets Phyllo Pastry (Keep covered with a damp cloth to prevent drying out.)
  • 4 tbsp Olive Oil (Brush between layers and on tops.)

Chili Honey Sauce

  • 1/2 cup Honey (Use high-quality honey.)
  • 1 tbsp Chili Flakes (Adjust according to desired spice level.)
  • 1 tbsp Lemon Juice (Freshly squeezed)

Instructions

  1. Preparation: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix the Filling: In a mixing bowl, crumble the feta cheese and combine it thoroughly with fresh dill, mint, lemon zest, and black pepper until evenly distributed.
  3. Prepare Phyllo Strips: Lay two sheets of phyllo pastry flat on a clean surface, brushing each sheet generously with olive oil to keep them moist and add crispiness. Cut the layered sheets into strips of your desired width for rolling.
  4. Assemble Rolls: Place about one tablespoon of the feta mixture at one end of each phyllo strip. Fold the edges inward to enclose the filling and roll the strip tightly to form a neat roll.
  5. Brush & Bake: Arrange the rolls on the prepared baking sheet, brush the tops with olive oil for a golden finish, then bake in the preheated oven for 18-20 minutes or until they turn golden brown and crisp.
  6. Make Chili Honey: While the rolls bake, combine honey, chili flakes, and freshly squeezed lemon juice in a small saucepan. Warm over low heat, stirring occasionally, until the mixture is combined and slightly thickened – do not boil.
  7. Serve: Remove the rolls from the oven and allow them to cool slightly. Drizzle generously with the warm chili honey sauce before serving to add a perfect balance of sweetness and spice.

Notes

  • Keep phyllo pastry covered with a damp cloth to prevent it from drying out and becoming brittle.
  • Adjust chili flakes in the honey sauce to control the heat level to your preference.
  • Substitutes like goat cheese or ricotta can be used if you prefer a milder or creamier filling.
  • Serve these rolls warm with additional honey drizzle on the side for dipping.
  • This recipe works great as an appetizer or party finger food.
