Instructions

  1. Preheat and prepare baking sheet: Heat the oven to 325°F (163°C) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
  2. Make honey mustard glaze: In a small bowl, whisk together Dijon mustard, mayonnaise, Greek yogurt, honey, and white wine vinegar until smooth and creamy, combining all flavors well.
  3. Prep salmon: Pat the salmon dry with paper towels to remove excess moisture, which helps the glaze adhere and promotes even cooking. Place the salmon skin-side down on the prepared parchment-lined baking sheet, then season the top evenly with 2 teaspoons of fine salt.
  4. Apply the glaze: Using a silicone basting brush, generously coat the top of the salmon fillets with the honey mustard mixture, ensuring full coverage for a flavorful crust.
