Ingredients

Scale

Truffle Base:

  • 2 cups white chocolate pieces
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender
  • 2 Tablespoons honey
  • 1 drop violet food coloring (optional)
  • 1 drop royal blue food coloring (optional)
  • 1 drop super red food coloring (optional)

Coating:

  • 2 cups white chocolate (melted or tempered)

Instructions

  1. Prepare Chocolate: Place white chocolate pieces in a medium bowl and set aside.
  2. Infuse Cream: In a small saucepan, combine the heavy cream and dried lavender. Heat over medium-low heat until bubbles form around the edges.
  3. Steep Lavender Cream: Turn off the heat and allow the lavender to steep in the cream for 5 minutes to infuse flavor.
  4. Strain Cream: Strain the lavender-infused cream into the bowl with the white chocolate pieces.
  5. Melt Mixture: Melt the chocolate and cream mixture until smooth by microwaving in 15-second increments, stirring after each, or using a bain-marie.
  6. Add Honey and Color: Stir in the honey. If desired, mix in the food coloring drops to tint the truffle base.
  7. Chill Mixture: Pour the mixture into a clean pan and cover with plastic wrap. Refrigerate until firm, approximately 3 hours.
  8. Scoop Truffles: Using a small cookie scoop or 1½ teaspoon measuring spoon, portion out the truffle mixture.
  9. Shape Truffles: Coat your hands lightly with powdered sugar and roll each portion into a smooth ball.
  10. Freeze: Place the shaped truffles in the freezer for 15-20 minutes to firm before coating.
  11. Coat Truffles: Dip each chilled truffle into the melted or tempered white chocolate to evenly coat.
  12. Set Coating: Place coated truffles on a parchment-lined sheet pan and allow the coating to set before serving or storing.

Notes

  • Use culinary-grade dried lavender to avoid bitterness and ensure a pleasant floral flavor.
  • If food coloring is used, add only a few drops to maintain color without overpowering flavor.
  • Tempering the white chocolate for coating ensures a smooth, glossy finish and avoids bloom.
  • Store truffles in an airtight container in the refrigerator for up to one week or freeze for longer storage.
  • Ensure hands are lightly dusted with powdered sugar when rolling to prevent sticking.
