Ingredients

Scale

Truffle Base

  • 2 cups white chocolate pieces
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender
  • 2 tablespoons honey
  • 1 drop violet food coloring (optional)
  • 1 drop royal blue food coloring (optional)
  • 1 drop super red food coloring (optional)

Coating

  • 2 cups white chocolate (melted or tempered)
  • Powdered sugar (for coating hands)

Instructions

  1. Prepare Chocolate: Place white chocolate pieces in a medium bowl and set aside.
  2. Heat Cream and Lavender: Combine heavy cream and dried lavender in a small saucepan and heat over medium-low heat until it starts to bubble around the edges.
  3. Steep Lavender: Turn off heat and allow the lavender to steep in the cream for 5 minutes to infuse flavor.
  4. Strain Mixture: Strain the lavender-infused cream into the bowl with the white chocolate pieces to remove lavender buds.
  5. Melt Chocolate Mixture: Melt the white chocolate and cream mixture gently using the microwave in 15-second intervals, stirring after each until smooth, or use a bain marie (double boiler) method for even melting.
  6. Add Honey and Coloring: Stir in the honey to sweeten and mix in any chosen food coloring drops to achieve desired color.
  7. Chill Mixture: Pour the mixture into a clean pan, cover with plastic wrap, and refrigerate for about 3 hours until the mixture is set and firm.
  8. Portion and Shape: Using a small cookie scoop or 1½ teaspoon measuring spoon, scoop out the truffle mixture. Coat your hands lightly with powdered sugar and roll each scoop into a smooth ball.
  9. Freeze Truffles: Place the formed truffle balls in the freezer for 15 to 20 minutes to firm up before coating.
  10. Dip in White Chocolate: Dip each chilled truffle into the melted or tempered white chocolate coating and place on a parchment-lined sheet pan.
  11. Set Coating: Allow the chocolate coating to fully set at room temperature or in the refrigerator before serving or storing.

Notes

  • If you prefer a stronger lavender flavor, you can increase the steeping time but avoid over-steeping to prevent bitterness.
  • Using high-quality white chocolate will greatly affect the taste and texture of the truffles.
  • Tempering the chocolate coating helps achieve a glossy finish and crisp snap.
  • Truffles can be stored in an airtight container in the refrigerator for up to one week.
  • For variation, try rolling truffles in finely chopped nuts or coconut flakes before the coating sets.
