Instructions

  1. Prepare the chicken: Trim any excess fat from the chicken breasts or thighs and cut them into bite-sized pieces for even cooking and better sauce coverage.
  2. Make the sauce: In a medium bowl, whisk together honey, low-sodium soy sauce, ketchup, rice vinegar, minced garlic, ground ginger, and black pepper until smooth and well combined.
  3. Cook the chicken: Heat a large skillet over medium-high heat and add a little oil. Add the chicken pieces, cooking until they are golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove from skillet and set aside.
  4. Combine chicken and sauce: Pour the prepared sauce into the same skillet and bring it to a gentle simmer. If you prefer a thicker sauce, mix cornstarch and cold water in a small bowl and whisk this slurry into the simmering sauce. Let the sauce thicken, about 2 minutes.
  5. Finish the dish: Return the cooked chicken to the skillet and toss to coat evenly in the thickened sauce. Cook together for 1-2 minutes to allow the flavors to meld.
