Instructions

  1. Squeeze the lemon: Begin by cutting the lemon in half and squeezing it to extract fresh lemon juice. Measure out approximately 2 ½ ounces to use in the recipe.
  2. Add ingredients to blender: Place the freshly squeezed lemon juice into a blender along with 2 tablespoons grated fresh ginger, 2 tablespoons honey, and 2 tablespoons water.
  3. Blend the mixture: Blend these ingredients together until well combined to create a ginger-honey lemon syrup.
  4. Strain mixture: Pour the blended mixture through a fine strainer to remove ginger fiber and pulp, resulting in a smooth syrup.
  5. Prepare the drink: Fill a glass with ice cubes. Pour the ginger-lemon syrup over the ice.
  6. Top with sparkling water: Slowly add 16 ounces of chilled sparkling water to the glass, stirring gently to combine while maintaining the carbonation.
