  • ¾ cup rolled oats (gluten-free or regular)
  • 1 tbsp pumpkin pie spice
  • ½ tsp baking soda
  • ½ cup chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC). Prepare an 8×8-inch baking pan by lining it with parchment paper or greasing it to prevent sticking.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, pumpkin puree, pure maple syrup, coconut sugar, melted coconut oil, and vanilla extract until the mixture is smooth and well combined.
  3. Add Dry Ingredients: Add the homemade oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet mixture. Stir everything together gently until just combined. Then fold in the chocolate chips carefully to distribute them evenly without overmixing.
  4. Prepare for Baking: Pour the batter evenly into the prepared baking pan. For extra chocolatey goodness, sprinkle additional chocolate chips over the top of the batter.
  5. Bake: Place the pan in the preheated oven and bake for 24 to 26 minutes. The bars are done when a toothpick inserted in the center comes out clean and the edges turn golden brown.
