These Halloween Shortbread Cookies are buttery, tender, and perfectly sweet, featuring festive sprinkles and optional mini chocolate chips for an extra touch of indulgence. Ideal for Halloween parties or as a spooky treat to share with friends and family, these cookies combine classic shortbread with fun, seasonal decorations.

Ingredients

Scale

Shortbread Dough

  • 1 cup unsalted butter, room temperature
  • ⅔ cup powdered sugar
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 2¼ cups all purpose flour
  • ¼ teaspoon salt

Mix-Ins and Decorations

  • ½ cup mini semisweet chocolate chips, plus more for melting (optional)
  • ⅓ cup Halloween sprinkles, divided

Instructions

  1. Prepare the Dough: In a large bowl, cream together the unsalted butter and powdered sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing well to combine.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the all purpose flour and salt. Gradually add the dry mixture to the butter mixture, stirring until a dough forms.
  3. Add Chocolate Chips and Sprinkles: Gently fold in the mini semisweet chocolate chips and half of the Halloween sprinkles into the dough to evenly distribute them.
  4. Shape and Chill: Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour to firm up the dough and make it easier to roll out.
  5. Roll and Cut: Preheat the oven to 350°F (175°C). On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use cookie cutters to cut out festive Halloween shapes.
  6. Decorate and Bake: Place cookies on a parchment-lined baking sheet. Sprinkle the remaining Halloween sprinkles on top. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Cool and Optional Decoration: Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely. If desired, melt additional chocolate chips and drizzle over cooled cookies for added decoration.

Notes

  • Make sure the butter and egg yolk are at room temperature to ensure a smooth dough.
  • Refrigerating the dough is crucial for easy handling and prevents spreading during baking.
  • Use festive Halloween-themed sprinkles to enhance the seasonal look of the cookies.
  • For a different flavor, you can substitute vanilla extract with almond or maple extract.
  • Store cookies in an airtight container at room temperature for up to 5 days.
