Pie Crust

  • 100 ml Water (½ cup)
  • 150 g Cheese (Gouda or Cheddar, diced) (5.3 oz)

Custard

  • 4 Eggs
  • 200 ml Milk (0.85 cup)
  • 200 ml Whipping cream (0.85 cup)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the pie crust: Cut the butter into small pieces. Add the flour and a pinch of salt. Pinch together the flour and butter by hand or mix in a food processor until a crumbly mass forms.
  2. Form the dough: Add cold water and mix quickly to form a dough. Press the dough evenly into a pie tin approximately 25-28 cm (9.5-11 inch) in diameter. Notch the bottom with a fork to prevent bubbling.
  3. Protect crust edges: Tear a narrow strip of aluminum foil and cover the edges of the pie crust to prevent them from overbaking during cooking.
  4. Pre-bake the crust: Preheat the oven to 200° C (392° F). Bake the pie crust in the middle of the oven for 10 minutes until slightly set but not fully cooked.
  5. Cook the ground beef: Over medium heat, brown the ground beef until no pink remains. Stir frequently to break up the meat.
  6. Season the meat: Add taco seasoning and mix it thoroughly into the meat while stirring.
  7. Simmer the filling: Pour in 100 ml (½ cup) water, then simmer the seasoned ground beef for a few minutes until the sauce thickens and coats the meat well.
  8. Prepare the custard: In a bowl, whisk together the eggs, milk, whipping cream, salt, and pepper until fully combined and smooth.
  9. Assemble the quiche: Remove the pre-baked pie crust from the oven. Fill it evenly with the cooked taco-seasoned ground beef and diced cheese.
  10. Pour custard: Carefully pour the egg mixture over the filling, ensuring it distributes evenly throughout the pie.
  11. Bake the quiche: Return the pie to the oven and bake at 200° C (392° F) for 30 minutes, or until the custard is set and the top is golden brown.
