  • 2 tbsp olive oil
  • 2 tbsp hot honey (store-bought or homemade)

Instructions

  1. Prep and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until well coated. Spread them out evenly on a baking sheet and roast for 40–45 minutes, stirring halfway through to ensure even cooking and caramelization.
  2. Cook Ground Beef: While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced yellow onion and sauté until softened and translucent, about 5 minutes. Add the ground beef, crumble it with a spatula, then sprinkle the taco seasoning over the meat. Cook until the beef is browned and fully cooked, about 8–10 minutes, stirring occasionally to mix in the seasoning evenly.
  3. Assemble Bowls: Divide the roasted sweet potatoes evenly into serving bowls. Layer the seasoned ground beef on top, followed by the sliced avocado and a generous scoop of cottage cheese in each bowl.
  4. Add Hot Honey: Drizzle 2 tablespoons of hot honey over each assembled bowl. Garnish with optional toppings like chopped cilantro, red pepper flakes, or a wedge of lime to enhance the flavor and add a fresh touch.
