Ingredients

Scale

Shrimp

  • 2 pounds large shrimp, peeled and deveined

Vegetables and Olives

  • 2 pints cherry tomatoes, halved
  • 1 large red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved

Cheese

  • 8 oz feta cheese, crumbled

Seasonings and Oils

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Fresh Herbs

  • 1/4 cup fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat and Prepare Base: Preheat your oven to 450°F (230°C) and lightly oil a large sheet pan to prevent sticking.
  2. Combine Vegetables and Seasoning: In a large mixing bowl, combine the halved cherry tomatoes, thinly sliced red onion, and halved Kalamata olives. Drizzle with half of the olive oil, lemon juice, minced garlic, dried oregano, red pepper flakes, sea salt, and black pepper. Toss everything together to evenly coat the vegetables and spread the mixture evenly across the prepared sheet pan.
  3. Roast Vegetable Mixture: Roast the vegetable mixture in the oven for 8 minutes, until the tomatoes start to soften and release their juices, creating a flavorful base.
  4. Prepare Shrimp: While the vegetables roast, pat the shrimp dry using paper towels to ensure they roast properly. In a separate bowl, toss the shrimp with the remaining olive oil, sea salt, and black pepper for seasoning.
  5. Add Shrimp and Feta: Remove the sheet pan from the oven and nestle the seasoned shrimp evenly among the roasted vegetables. Sprinkle the crumbled feta cheese evenly over the entire pan.
  6. Final Roast: Return the pan to the oven and roast for an additional 6 to 8 minutes, or until the shrimp turn pink and are cooked through, and the feta cheese is slightly softened with golden spots.
  7. Garnish and Serve: Remove from the oven and immediately sprinkle the fresh chopped dill and parsley over the top. Serve the dish hot with crusty bread or over rice to absorb the delicious pan juices.

Notes

  • For extra vegetables, add sliced bell peppers or zucchini along with the tomatoes and onions.
  • Substitute goat cheese for feta if you prefer a milder cheesy flavor.
  • Adding a handful of pine nuts before roasting can add a pleasant crunch and healthy fats.
  • Leftovers can be stored in the refrigerator for up to 2 days; reheat gently to avoid overcooking the shrimp.
  • This dish is best served immediately to enjoy the optimal texture and flavor.
