  • 3 cups chopped seeded plum tomatoes
  • 1/2 cup sliced green onions
  • 1/4 cup minced fresh parsley, divided
  • 2 tablespoons minced fresh basil
  • 2 tablespoons lemon juice

  • 1 cup crumbled feta cheese, divided
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook the spaghetti according to the package directions until al dente. Drain and set aside.
  2. Make the sauce: Heat olive oil in a nonstick skillet over medium heat. Add dried oregano and minced garlic, sautéing for about one minute until the garlic becomes tender and fragrant. Stir in chopped seeded plum tomatoes, sliced green onions, 2 tablespoons of the minced parsley, fresh basil, and lemon juice. Cook and stir the mixture for two minutes until heated through. Remove the skillet from heat.
  3. Finish the spaghetti: Add the drained spaghetti directly into the skillet with the tomato herb sauce. Toss to combine thoroughly. Stir in 3/4 cup of crumbled feta cheese, salt, and pepper. Plate the pasta and then sprinkle the remaining feta cheese and the remaining 2 tablespoons of parsley over the top. Serve immediately while warm.
