Shrimp and Vegetables
- 1 lb large shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 medium zucchini, sliced
Seasonings & Oil
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 ½ tsp Italian seasoning
- 1/2 tsp salt
- Prepare the ingredients: Rinse and peel and devein the shrimp if not already done. Wash and slice the vegetables: halve the cherry tomatoes, dice the bell pepper, and slice the zucchini. Mince the garlic cloves finely.
- Heat the skillet and oil: Place a large skillet over medium heat and add 2 tablespoons of olive oil, allowing it to warm up but not smoke.
- Sauté garlic and shrimp: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque.
- Add vegetables: Add the cherry tomatoes, diced bell pepper, and sliced zucchini to the skillet. Stir to combine and cook for an additional 4-5 minutes until the vegetables are tender but still crisp.
- Season the dish: Sprinkle the Italian seasoning, salt, and grated Parmesan cheese over the shrimp and veggies. Stir gently to evenly coat everything with the flavors and allow the cheese to melt slightly.
- Serve: Remove from heat and transfer to a serving dish. Serve hot as a main or alongside your favorite grain or bread.
