Shrimp and Vegetables

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 medium zucchini, sliced

Seasonings & Oil

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 ½ tsp Italian seasoning
  • 1/2 tsp salt

Instructions

  1. Prepare the ingredients: Rinse and peel and devein the shrimp if not already done. Wash and slice the vegetables: halve the cherry tomatoes, dice the bell pepper, and slice the zucchini. Mince the garlic cloves finely.
  2. Heat the skillet and oil: Place a large skillet over medium heat and add 2 tablespoons of olive oil, allowing it to warm up but not smoke.
  3. Sauté garlic and shrimp: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque.
  4. Add vegetables: Add the cherry tomatoes, diced bell pepper, and sliced zucchini to the skillet. Stir to combine and cook for an additional 4-5 minutes until the vegetables are tender but still crisp.
  5. Season the dish: Sprinkle the Italian seasoning, salt, and grated Parmesan cheese over the shrimp and veggies. Stir gently to evenly coat everything with the flavors and allow the cheese to melt slightly.
  6. Serve: Remove from heat and transfer to a serving dish. Serve hot as a main or alongside your favorite grain or bread.
