Ingredients

Scale

For the Chicken and Potatoes:

  • 4 bone-in, skin-on chicken thighs
  • 1 lb (about 500g) baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp olive oil

For Seasoning:

  • 1 tsp dried Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • 1/2 tsp paprika
  • Salt and black pepper, to taste

For Garnish (optional):

  • 2 tbsp fresh parsley, chopped
  • 1 lemon, sliced (for serving)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the chicken and potatoes evenly.
  2. Prepare the seasoning mix: In a small bowl, combine dried Italian seasoning, paprika, salt, and black pepper. Set this flavorful mix aside.
  3. Toss potatoes: In a large bowl, toss the halved baby potatoes with half the olive oil, half the minced garlic, and half of the seasoning mix until evenly coated.
  4. Prepare the chicken: Pat the chicken thighs dry with paper towels. Rub the remaining olive oil and minced garlic all over the chicken. Sprinkle the remaining seasoning mixture evenly over the chicken thighs ensuring a good coating.
  5. Arrange in baking dish: Place the seasoned potatoes in a single layer in a roasting pan or large baking dish. Nestle the seasoned chicken thighs skin side up among the potatoes.
  6. Add Parmesan cheese: Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes for a deliciously savory crust.
  7. Roast: Bake in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender when pierced with a fork. The skin should be golden brown and crispy.
  8. Garnish and serve: Remove from oven and let rest for 5 minutes. Sprinkle chopped fresh parsley over the dish and serve with lemon slices for an added burst of freshness and acidity.

Notes

  • Use bone-in, skin-on chicken thighs for the best flavor and juiciness.
  • If baby potatoes are not available, small red or Yukon gold potatoes work well.
  • For a spicier kick, add a pinch of red pepper flakes to the seasoning mix.
  • Make sure to pat the chicken dry before seasoning to ensure crispy skin.
  • This dish pairs well with a simple green salad or steamed vegetables.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
