Dough Ingredients
- 4 1/2 tablespoons unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon all-purpose flour
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup whole or 2% milk (warmed to 110°F)
- 1 large egg (room temperature)
Topping Ingredients
- 1 beaten egg, for brushing the tops
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt (for finishing)
- Prepare the dough: In a mixing bowl, combine the warm milk and instant yeast, stirring gently and letting it sit for 5 minutes until foamy. Add the granulated sugar, 4 1/2 tablespoons softened butter, minced garlic, chopped parsley, fine sea salt, and the large egg. Gradually incorporate the flour, mixing until a soft dough forms.
- Knead the dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer fitted with a dough hook to knead for 6-7 minutes on medium speed.
- First rise: Place the dough in a greased bowl, cover it loosely with a clean towel or plastic wrap, and allow it to rise in a warm place for about 1 to 1 1/2 hours, or until it doubles in size.
- Shape the rolls: Once risen, punch down the dough to release the air. Divide the dough into 12 equal pieces and shape each into a smooth ball. Place the rolls on a baking sheet lined with parchment paper, leaving space between each roll.
- Second rise: Cover the shaped rolls with a towel and let them rise again for 30-45 minutes, until puffed up.
- Prepare garlic butter topping: In a small saucepan, melt the 2 tablespoons of butter with 1 tablespoon minced garlic and 1 tablespoon chopped parsley over low heat. Stir and remove from heat as soon as the garlic is fragrant and softened.
- Brush rolls and bake: Preheat your oven to 375°F (190°C). Brush each roll generously with the beaten egg, then bake the rolls for 15-18 minutes until golden brown on top.
- Finishing touches: Immediately after removing the rolls from the oven, brush them with the warm garlic butter mixture, then sprinkle flaky sea salt over the tops for added flavor and texture.
- Serve: Allow the rolls to cool slightly before serving. These garlic bread rolls are best enjoyed warm and fresh from the oven.
Notes
- For accurate flour measurement, spoon the flour lightly into a measuring cup and level it off with a knife instead of scooping directly with the cup.
- Use whole or 2% milk warmed to about 110°F to properly activate the yeast without killing it.
- Make sure the butter used in the dough is softened but not melted for proper texture.
- Customize the herb flavor by adding rosemary or thyme along with parsley if desired.
- Flaky sea salt adds a nice crunch and bursts of flavor but can be omitted if unavailable.
