Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Assembly

  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese

Instructions

  1. Prepare the Beef: In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onions are soft. Drain excess fat, then season with garlic powder, cumin, salt, and pepper. Stir to combine and cook for another minute to let the flavors meld.
  2. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the enchiladas.
  3. Assemble the Enchiladas: Spread a thin layer of enchilada sauce on the bottom of a baking dish. Warm the flour tortillas slightly to make them pliable. Spoon a generous amount of the beef mixture onto each tortilla, roll them up tightly, and place seam-side down in the baking dish.
  4. Add Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded cheese on top to create a gooey cheesy layer when baked.
  5. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is melted, bubbly, and lightly golden.
  6. Serve: Remove from the oven and let the enchiladas rest for a few minutes before serving. Garnish with chopped cilantro, sour cream, or sliced jalapeños if desired.

Notes

  • You can substitute corn tortillas for a gluten-free option.
  • Add diced green chilies or jalapeños to the beef mixture for extra heat.
  • Leftover enchiladas keep well refrigerated for up to 3 days.
  • Use a blend of cheddar and Monterey Jack cheese for richer flavor.
  • To reduce fat, use lean ground beef or ground turkey as an alternative.
