Ingredients

Scale

Garlic Paste

  • 6 fat cloves garlic
  • Coarse salt (for smashing garlic)

Base and Dressing

  • 2 tablespoons mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 lemon (juiced)
  • 1 teaspoon Dijon mustard
  • 1/3 cup olive oil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons freshly grated Parmesan
  • Salt (to taste)
  • Fresh cracked pepper (to taste)

Instructions

  1. Prepare the Garlic Paste: Mince the garlic finely and sprinkle with a bit of coarse salt. Use the back of your knife to smash the garlic into a soft paste by pressing and dragging the knife towards you repeatedly until smooth.
  2. Combine Base Ingredients: Add the garlic paste to a small mixing bowl along with the mayonnaise and red wine vinegar. Squeeze in the lemon juice and add the Dijon mustard. Whisk thoroughly to blend all ingredients well.
  3. Add Olive Oil and Seasonings: Pour in the olive oil, dried oregano, and freshly grated Parmesan cheese. Whisk vigorously until the dressing becomes smooth and creamy in texture.
  4. Adjust Flavor and Seasoning: Taste the dressing and season with salt and fresh cracked pepper according to your preference. If the dressing is too tangy, add more olive oil to mellow it out; if it needs more acidity, add extra lemon juice or vinegar.

Notes

  • For a smoother texture, blend the ingredients briefly in a food processor or blender.
  • Use freshly grated Parmesan for best flavor and freshness.
  • This dressing can be stored in the refrigerator for up to 5 days in an airtight container.
  • Adjust garlic quantity to suit your taste preferences.
  • Ideal for drizzling over green salads, roasted vegetables, or as a dip for fresh bread.
