Chicken
- 3 boneless chicken breasts, diced into 1 inch pieces
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil, divided
Vegetables
- 2 cups broccoli florets, diced into bite size pieces
- 1/2 yellow bell pepper, cut into 1 inch pieces
- 1/2 red bell pepper, cut into 1 inch pieces
- 1/2 cup carrots, shredded
Sauce & Seasoning
- 1/2 tsp ground ginger
- 2 tsp minced garlic
- 2 tbsp sesame seeds
- 1 tbsp cornstarch
- 1/4 cup chicken broth
- 1/4 cup soy sauce
- 2 tbsp honey
- Prepare the Sauce: In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until smooth. Set this sauce mixture aside for later use.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Sauté the chicken for 3 to 5 minutes until it is browned and cooked through. Once done, remove the chicken from the skillet and place it on a separate plate.
- Sauté the Vegetables: Reduce the heat to medium-high and add the remaining 1 tablespoon of olive oil to the skillet. Add the broccoli, yellow and red bell peppers, and shredded carrots. Cook the vegetables, stirring occasionally, until they are tender but still crisp, about 4 to 5 minutes.
- Add Aromatics: Stir in the ground ginger and minced garlic into the vegetables. Cook for an additional 1 to 2 minutes until the garlic becomes fragrant and aromatic.
- Combine and Cook with Sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared stir-fry sauce and stir well to coat all ingredients. Bring the mixture to a boil while stirring occasionally, then let it boil for 1 minute to allow the sauce to thicken.
- Finish and Serve: Sprinkle the stir fry with sesame seeds. Serve immediately as is or over cooked rice for a complete meal. Enjoy your flavorful and healthy chicken stir fry!
Notes
- You can substitute chicken breasts with chicken thighs for a juicier texture.
- Feel free to add other vegetables such as snap peas, mushrooms, or baby corn for variety.
- Adjust the amount of honey in the sauce based on your desired sweetness level.
- Use low sodium soy sauce to reduce the salt content in the dish.
- For a gluten-free option, ensure soy sauce is tamari or gluten-free variety.
