Cream Soup

  • 2126 ounces condensed cream of mushroom soup (2 small cans or 1 large can)

Instructions

  1. Prepare the beef: Cut the beef into 1-inch cubes, ensuring even-sized pieces for uniform cooking and tenderness.
  2. Brown the beef: Heat 1 tablespoon of olive oil in a large Dutch oven or pot over medium-high heat until shimmering. Add about half of the beef, allowing it to brown well on all sides. Remove the browned beef and repeat with the remaining beef. Return all browned beef pieces to the pot.
  3. Mix the broth and seasonings: In a small bowl, combine the 3 cups of beef broth, ⅓ cup red wine if using, and stir in the packets of brown gravy mix, au jus gravy mix, and onion soup mix until well blended.
  4. Add mixtures to pot: Pour the broth and seasoning mixture into the Dutch oven containing the beef. Add the condensed cream of mushroom soup and stir gently to combine. The mixture may be a bit lumpy but will smooth out as it cooks.
  5. Simmer the beef tips: Bring the contents of the pot to a boil, then reduce the heat to a low simmer. Cover and let cook for 1½ to 2 hours, stirring occasionally, until the beef is tender and the gravy has thickened.
  6. Serve: Spoon the beef tips and gravy over cooked egg noodles, rice, or mashed potatoes. Garnish with freshly chopped parsley if desired for a pop of color and freshness.
