Ingredients

Scale

Chicken & Sauce

  • 1 pound boneless, skinless chicken breast
  • 1/2 cup BBQ sauce, plus more for brushing

Vegetables & Herbs

  • 1/4 cup chopped red onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped cilantro

Pizza Base & Cheese

  • 1 (12-inch) pizza crust
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Prepare the Chicken: Preheat oven to 400°F (200°C). Dice the boneless, skinless chicken breast into bite-sized pieces. In a bowl, toss the chicken pieces with 1/2 cup of BBQ sauce until well-coated.
  2. Cook the Chicken: Heat a skillet over medium heat and cook the BBQ-coated chicken pieces for about 6-8 minutes, stirring occasionally, until cooked through and slightly caramelized. Remove from heat.
  3. Prepare the Pizza Base: Place the 12-inch pizza crust on a baking sheet or pizza stone. Brush the crust lightly with additional BBQ sauce to add flavor and moisture.
  4. Add Toppings: Evenly distribute the cooked BBQ chicken over the pizza crust. Sprinkle the chopped red onion and green bell pepper over the chicken. Top with shredded mozzarella and Monterey Jack cheeses.
  5. Bake the Pizza: Place the pizza in the preheated oven and bake for 12-15 minutes, or until the cheese is melted, bubbly, and starting to turn golden, and the crust is crisp.
  6. Garnish and Serve: Remove pizza from oven and sprinkle with chopped fresh cilantro. Slice and serve immediately for a warm, flavorful meal.

Notes

  • For extra smoky flavor, use smoked BBQ sauce or add a dash of smoked paprika to the chicken.
  • Feel free to substitute chicken breast with thighs for juicier meat.
  • You can customize vegetable toppings by adding sliced jalapeños or mushrooms.
  • If preferred, use a whole wheat or gluten-free pizza crust for dietary variations.
  • Leftover pizza can be stored in the refrigerator for up to 3 days and reheated for best taste.
