Instructions

  1. Saute the Veggies: Preheat a large skillet over medium heat and add the canola oil. Sauté the chopped onions and sliced mushrooms until they become tender and fragrant, about 5-7 minutes. Add the thawed, well-drained spinach and chopped ham to the skillet. Cook the mixture, stirring frequently, until all moisture evaporates and the mixture is nicely combined. Remove from heat and allow to cool slightly.
  2. Preheat Oven: While the veggie mixture is cooling, preheat your oven to 350°F (175°C) and grease a 9-inch pie plate or quiche dish using butter, cooking spray, or canola oil to prevent sticking.
  3. Mix Eggs and Cheese: In a large mixing bowl, beat the 5 large eggs until smooth. Stir in the shredded Muenster or Monterey Jack cheese evenly.
  4. Combine Ingredients: Add the cooled spinach, ham, onion, and mushroom mixture to the egg and cheese blend. Season with 1/8 teaspoon pepper and stir thoroughly to combine all ingredients evenly.
  5. Assemble and Bake: Pour the entire mixture into the prepared pie plate or quiche dish. Place it in the preheated oven and bake for 40 to 45 minutes, or until a knife inserted into the center comes out clean and the top is lightly golden.
  6. Cool and Serve: Remove the quiche from the oven and let it cool for 5-10 minutes before slicing. Serve warm or at room temperature for best flavor.
