Chicken and Vegetables
- 4 boneless skinless chicken breasts
- 4 Russet potatoes, cut into 2-inch pieces
- 2 cups baby carrots
Sauce
- 1 packet dry ranch dressing mix (approximately 1 ounce)
- 1 can (10 oz) cream of chicken soup
- 1 cup milk
- Prepare the Vegetables: Wash and cut the Russet potatoes into 2-inch pieces. Rinse the baby carrots if needed. Place the potatoes and carrots evenly in the bottom of the crockpot.
- Add the Chicken: Place the boneless skinless chicken breasts over the layer of vegetables in the crockpot.
- Mix the Sauce: In a separate bowl, whisk together the dry ranch dressing mix, cream of chicken soup, and milk until smooth and fully combined.
- Pour the Sauce: Carefully pour the ranch and soup mixture over the chicken and vegetables, ensuring everything is well coated.
- Cook Low and Slow: Cover the crockpot and cook on low for 6 to 7 hours, or until the chicken is cooked through and the potatoes are tender when pierced with a fork.
- Serve: Once cooked, remove the chicken and vegetables from the crockpot. Spoon some of the creamy sauce from the pot over the top and serve warm.
Notes
- For extra flavor, add minced garlic or chopped fresh herbs to the sauce mixture.
- You can substitute baby carrots with sliced regular carrots if desired.
- Use chicken thighs instead of breasts if you prefer darker meat with more richness.
- If you want a thicker sauce, remove the lid during the last 30 minutes of cooking to allow it to reduce slightly.
- To make it dairy-free, substitute the milk and cream of chicken soup with non-dairy alternatives.
